What to do with it: A classic pure and crystalline Barolo. Get those truffles ready. Pasta is a no brainer but rabbit is particularly good as well.

Why it’s worth drinking: Ravera is quickly becoming known for producing outstanding wines and much of that is due to the work of the Elvio Cogno estate. The wines are consistently well reviewed and 2016 was a standout vintage in Piedmont.
