What to do with it: You’ll want to decant this for a few hours prior to serving. Pasta is an obvious choice for parings. A nice Bolognaise and you’re set.

Why it’s worth drinking: Brunello di Montalcino as a wine was began by Biondi Santi. As such they have more experience with the wines than anybody and their 25ha estate is almost perfect for cultivation of Sangiovese Grosso. Some call this the highest expression of Sangiovese.
